Make this dip:
1 package of Knorr's vegetable soup mix, or leek soup mix. (I couldn't find the leek, and heard that it tastes really yummy.) The vegetable soup mix is the original recipe.
1 16 oz container sour cream. (We always use fat free sour cream.)
1/4 cup mayo. (the recipe calls for a cup, but that would be too runny.)
1 8 oz can of water chestnuts. (if you don't like them they are optional, but I must say that they REALLY make the dip. Without them, it would not be the same.)
1 bag frozen spinach. (I used a bag that was a lb.)
5-6 stalks of green onions (optional)
I actually got this off of the back of the soup mix, so it isn't mine..but it is sooo delicious!
Take the powdered soup mix and put into a large bowl with the sour cream and mayo. Mix together very well. Chop the water chestnuts until they are fine..until they resemble finely chopped garlic. Add to wet ingredients already mixed. Chop green onions until they are also finely chopped. De thaw the spinach until there are no more ice crystals. Drain well. And then drain again. You will need to really drain the spinach until it is very, very dry. I used about 10 paper towels after draining into a colander. Add green onions and drained spinach to wet mixture. Stir very well. Keep stirring so that the spinach is not clumped together and you have a very good consistency. Here is where I did a taste test and determined garlic salt would really spice this up. I used about 2 teaspoons of garlic salt as a garnish on top, and just lightly stirred it in. You can eat this right away with cubed french bread, baguette, crackers, or toast. We bought 2 loaves of french bread and could have cubed up all of the bread and had plenty of dip to go around. Alot of people serve it in the french bread rounds..I prefer the loaves as you can use all of the bread and not have this empty bowl sitting where the dip was.
I made this on Saturday and it is still very tasty. It says on the package to refridge for an hour after mixing it, or even overnight. I liked it right away. It is the BEST spinach dip EVER! It was a huge hit and I will be adding it to my list of "have to's" when it comes to what foods we should make when having a get together. For sure.

How funny are you? You've never made that before?? I thought everyone knew about that dip OMG its the greatest. I don't put the water chestnuts in 'cause i don't like em. one tip: squeeze the excess water out of the spinach!
