Is with salad this time of year. I can eat it for lunch, snack and dinner, and it makes me so very happy. I am addicted to taco salad right now...I make mine pretty healthy though. Here is what I make:
Ground turkey..(98% fat free)
salad mix...I go for the romaine mix with radicchio. I love the texture/flavor..
can of nibblet corn
red onion
olives
salsa
sour cream..again, fat free..hey, or else my Alli interacts. LOL!
And a little colby jack..because you just have to have some cheese!
I brown the turkey, then add the can of corn and onion..there is no oil to drain since the turkey is so lean. Saute until corn is warmed through, and onion is soft.
Take off the heat, and then top salad mix while mixture is still warm. Add cheese, olive, salsa (as much as you like) and then a dollop of sour cream. I like to add just a few crushed tortilla chips and then mix her up with a fork and sit in peace and eat. Mmmmmmm I can eat this for days. If I had cilantro, I would be even more happier.
